1 cup cucumber cut into cubes
1 tsp oil
1/4 tsp mustard seeds
1 tbsp onion
1 tsp curry leaves
1/4 tsp ginger garlic paste optional
1 green chillie optional
1/2 tsp chillie powder to taste
1/8 tsp turmeric powder
1/4 tsp garam masala
1/4 tsp salt
1 tsp coconut milk powder or 1 tbsp cream
1 tbsp coriander leaves garnish optional
Cut cucumber into cubes put salt and leave aside.
Heat oil add mustard seeds, onions, curry leaves then the cucumber and spices. Cook in low heat covered until the cucumber is soft and has blended with flavour. Add coconut milk or cream mix well and remove from heat. Garnish with coriander leaves optional and serve hot as a side with rice or bread.

Interesting - the spice and then the creamy coconut milk - lots of flavors at play here. You have dressed up the cucumber!
