1 cup unpeeled pumpkin cubed
1 tsp garlic paste or 4 cloves garlic
1 tbsp onion
2 green chillies sliced
1/4 tsp turmeric
2" cinnamon
curry leaves
rampe optional
1/4 tsp fenugreek
1/2 tsp salt
1 cup water or thin coconut milk
Put all the ingredients together and simmer uncovered and cook till pumpkin is tender. Then grind the following to a paste and mix with 1 cup thick coconut milk (1 tbsp coconut milk powder) or milk and add to the pumpkin.
1 tbsp grated coconut
1 tsp raw rice
curry leaves
1/2 tsp cumin seeds
1 tsp mustard seeds
1 cup milk
Cook for a few minutes longer until well blended. Add 1/2 tsp lime juice (optional) and sprinkle cumin, curry leaves or roasted curry powder (optional).
Try cucumber, water gourd and ash gourd the same way.
Looks delcious, nice spicy curry.
