1 1/2 cup rice
3 tbsp ghee
1/4 cup onion
1/2 tsp turmeric
few curry leaves
2" screw pine leaf known as pandan leaf rampe
2" lemon grass optional
bay leaf optional
3 cardamoms
2 cloves
2" cinnamon stick
1/2 tsp salt
1/2 cup coconut milk (3 tbsp coconut milk powder)
water
Wash and drain the rice. Heat ghee add onions fry till golden brown add all the spices saute till fragrant. Add rice saute till transparent. Add salt and coconut milk with the water. The liquid should be 1" above the rice. Bring the water to boil then simmer the rice covered for 20 minutes till the rice is cooked. Remove the whole spices if you wish before serving.
For a variation add stock water, chicken or vegetable cubes.
Can garnish the rice with fried boiled eggs cut into half vertically, fried cashews, fried raisins, fried onions and parsley. This goes to the festive rice giveaway.
