2 tbsp oil
1/8 tsp mustard seeds
1/8 tsp cumin seeds
2 tbsp onion
1 bunch fenugreek leaves
1 cup potatoes chopped into 1/2" cubes
1/4 tsp chillie flakes or to taste
1/8 tsp turmeric
1/4 tsp salt
Remove hard stems, wash soft stems and leaves.
Heat oil, add mustard seeds then cumin seeds. Add onions and saute, then add potatoes with spices mix and cook for 2 to 3 minutes. Then add fenugreek leaves mix it and cook covered till the leaves are soft and potatoes are fully cooked. Add 1 tbsp water if needed.
This can be served as a curry with rice or stuffed in rotis.
This goes to dish it out potatoes and leafy greens.

ReplyDeleteI am just now starting to branch out to greens other than spinach. Funugreek leaves are something I am not even sure I can find in my small town. However, that curry sounds positively wonderful.
