Fenugreek leaves and potato curry


2 tbsp oil
1/8 tsp mustard seeds
1/8 tsp cumin seeds
2 tbsp onion
1 bunch fenugreek leaves
1 cup potatoes chopped into 1/2" cubes
1/4 tsp chillie flakes or to taste
1/8 tsp turmeric
1/4 tsp salt

Remove hard stems, wash soft stems and leaves.
Heat oil, add mustard seeds then cumin seeds. Add onions and saute, then add potatoes with spices mix and cook for 2 to 3 minutes. Then add fenugreek leaves mix it and cook covered till the leaves are soft and potatoes are fully cooked. Add 1 tbsp water if needed.
This can be served as a curry with rice or stuffed in rotis.

    Interesting I use Fenugreek seeds all the time, but never used the leaves. Really never even seen them ... will look for them. But I really like this dish!

  29. I am just now starting to branch out to greens other than spinach. Funugreek leaves are something I am not even sure I can find in my small town. However, that curry sounds positively wonderful.

  30. I had this dish at an indian restaurant and it did not look half as good as yours. I bet yours tastes a bazillion times better than what they had :D

  37. I love aloo methi and it's been some time now that I am craving for it... will try your recipe. Do you think I can use frozen methi? I don't like the dried one and they are the only two that I can find here...
