Zucchini herb omelette

1 cup zucchini grated
1 tbsp chives
1 tsp purple basil chopped optional
1 tsp thyme leaves
1 green chilli deseeded and chopped
1/4 tsp salt
3 eggs
1 tbsp avocado or olive oil

Squeeze out all the water from the zucchini and leave aside. Beat the eggs lightly and add the zucchini, chives, basil, thyme and salt.
Heat oil and when it is very hot add the egg mixture. Cook till the eggs are almost done, if the top is runny lift the egg up a little and allow the runny egg to go under.
When the bottom is cooked flip the egg and remove from heat.
This can be served on its own or with bread or flatbread.
All herbs used are fresh.

  17. I didn't think of adding zucchini in omelette but your beutiful omellete is totally inviting and I want this to be my breakfast this weekend. It's been a while we make omelette in the morning. Zucchini sounds like a nice ingredient for omelette and I can't wait to try!

  24. This is a very nice omelet, I think the chili is vital to pep up the zucchini and I'll bet the taste is wonderful. This is an "Italian" style oimelet (as opposed to "French" style rolled omelet) or fritatta and I like to stick it under the broiler for a few moments. My BW likes cheese garnish on omelets so the broiler imparts a nice colour.
