This healthy herbal porridge known as kola kanda is served for breakfast in Sri Lanka. I use the method below to make this porridge, as it is easy and flavourful.
3 cups of fresh curry leaves
1 cup grated fresh coconut
2 cloves of garlic
3 to 4 cups water
1 cup well cooked red rice
1/2 tsp or more salt to taste
Wash the curry leaves and puree it with the grated coconut, garlic and 1 to 2 cups of water each time in a blender. Strain the content and save the water in a pot.
Put the pulp back into the blender and puree it more with the rest of the water and strain it again and remove all the juice and add it to the pot. Once the pulp has no juice, discard the pulp.
Add the salt and cooked rice to the thick green juice and bring the mixture to a boil once. The porridge is served hot on its own or with a piece of jaggery on the side.
