1/2 cup whole milk
1/3 cup vegetable oil
1/2 cup sugar
1 egg beaten
1 3/4 cups flour
2 tbsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/4 cup brown sugar
1/2 tsp cinnamon
2 tbsp butter
1/3 cup walnuts chopped
Use a electric mixer and combine pumpkin, milk, oil, sugar and egg until it is well blended. In another bowl whisk flour, baking powder, salt and sugar then sift and add it to the wet mixture. Mix until all the ingredients are incorporated and still a little lumpy.
Combine brown sugar, cinnamon, butter and walnuts to resemble a crumb mixture for the streusel topping. Grease 12 muffin tins and pour the batter into the muffin cups and put the streusel topping before baking it for 18 to 22 minutes in a 400F preheated oven until golden brown. Serve warm.
I made this delicious recipe from the Ontario Table book many times as everyone in my family likes the fall flavours in this muffin.
