2 bay leaves
2" cinnamon stick
3 cloves
3 cardamom slightly crushed
1/2 cup onion chopped
1/2 cup tomato chopped
1/2 tsp garlic chopped
1/2 tsp ginger chopped
1/2 tsp chillie powder to taste
1 tsp coriander powder
1/2 tsp turmeric
1/2 tsp garam masala
1 tsp salt
1/2 tsp black pepper ground to taste
1/2 cup of water
2 tbsp cashew nuts
2 tbsp coconut grated
2 tbsp coriander leaves chopped
Heat the ghee then add the bay leaves, cinnamon stick, cloves and cardamom. Within a minute add the onions and saute. When the onions are translucent add the ginger, garlic and tomato. When the tomato is getting soft add the chicken with the spices and mix everything. In about 2 to 3 minutes add the water and cover with a lid and cook until the chicken is well cooked.
Grind the cashew nuts and grated coconut into a paste and add it in the end after the chicken is cooked to thicken the gravy. Add the chopped coriander leaves and serve it hot as a side with rice, bread or flatbread.
