Delicious Cheesecake From The Greek Yogurt Cookbook

The Greek Yogurt Cookbook by Lauren Kelly has over 125 nutritious recipes. Although, my family and I enjoy yogurt we barely eat it on its own. However, I find when I incorporate yogurt into our food such as in desserts or savoury dishes it gets eaten. Greek yogurts are different from traditional yogurt because it goes through an extra straining process that removes excess sugars and liquids. Some historians think yogurt was found accidentally far back as 9000BC when milk was stored in warm climates and it fermented resulting in yogurt. 
This Greek Yogurt Cookbook is full of delicious recipes and ideas for us to incorporate Greek yogurt into our breakfast, brunch, appetizers, smoothies, entrĂ©es, side dishes, salads, pasta and desserts. There are lots of health benefits in yogurt such as calcium, protein, minerals, vitamins and probiotic cultures.
I found many recipes that are interesting, which I am looking forward to make. We really enjoyed this cheesecake recipe from this book.
crust
1 cup graham cracker or cookie crumbs
1/2 cup butter melted
1/4 tsp ground cinnamon
1 tbsp brown sugar

Mix all the ingredients together and press it into a greased 9" pie pan and bake for 10 minutes in a preheated 325F oven. 


cheese cake

3/4 cup brown sugar 
1 pkg or 8oz cream cheese
1 cup plain Greek yogurt
1 tbsp vanilla
1 tbsp lemon juice
2 eggs
berries optional for topping

Mix the cream cheese, yogurt, sugar, vanilla and lemon juice in a bowl with an electric mixer on medium speed. When the mixture is almost smooth add the eggs on low speed and continue to beat on low speed until it is smooth. Pour the mixture into the pie pan and bake for about 45 to 60 minutes until the edges are golden brown.

The middle will not be completely set. Cool on the counter for at least 1/2 hour and refrigerate for about 4 hours or overnight before serving it cold with berries or sprinkled with cocoa powder.

I always leave some water in an oven proof bowl when the cheesecake is baking so it doesn't become dry.

  22. I am in Canada. I have never actually made any meals with yogurt but I substitute plain greek yogurt for anything that calls for sour cream! ( baked potatoes, veggie dips) We all like it better then sour cream and I don't feel guilty when I pile it on my plate!
