I made a Treasure Island cake using the following chocolate cake recipe for my son's birthday to accompany the pirate ship cake.
1 1/3 cups all-purpose flour
1 2/3 cups sugar
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
2/3 cup vegetable oil
2/3 cup sour cream
1 cup water
1 tablespoon distilled white vinegar
1 teaspoon vanilla
1 extra large egg
In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.
Add the oil and sour cream and whisk until blended. Add the water in 1/2 cup at a time and whisk until combined.
Whisk in vinegar and vanilla to blend. Add the eggs and whisk until combined.
Grease and line 3 8-inch cake pans and line them with parchment paper. Divide the batter equally among the 3 prepared pans, using a kitchen scale will help to do this. Bake in 350F preheated oven for 25 to 30 minutes, until a toothpick inserted into the center of the cake comes out almost clean.
Let the pans cool on wire racks for about 20 minutes, then invert the cakes onto the racks to finish cooling completely before frosting.
I made this chocolate cake following the instruction from this site, which we really enjoyed. For the frosting we used whipped chocolate frosting.
