Coconut Milk Ice Cream in Celebration of the National Ice Cream Month and Giveaway

In my home everyone anticipates the opportunity to cool off on a warm summer day with ice cream treats of all types. This July being the National Ice Cream Month, and the National Ice Cream Day is on Sunday, July 20th I will be partnering with Nielsen-Massey Vanillas to celebrate.  In celebration of Canada Day and the beginning of Ramadan, I made 1 quart Coconut Milk Ice Cream following the recipe from here.

2 13-oz cans of coconut milk
1 3/4 cups sugar adjust to taste
2 teaspoons vanilla extract or vanilla powder
Shredded desiccated coconut and chocolate chips optional

Chill the coconut milk can at least 4 hours before making the ice cream. Starting with cold ingredients is important when making ice cream, as it makes the freezing process much easier. 

Blend the the coconut milk, sugar and vanilla until smooth. Give a quick taste and add extra sugar or vanilla to taste. Solid like shredded coconut and chocolate chips are added to the ice cream machine during the last 5 minutes of processing. 

Pour the mixture into the ice cream machine and process 20 to 25 minutes according to the manufacturer’s instructions. When it is done, transfer it to a freezer-safe container and smooth the top down with a spatula. Press a piece of plastic wrap to the surface of the ice cream and freeze overnight or until solid. This ice cream doesn’t really freeze hard and is easy to scoop right out of the freezer.
