1 cup basmati or long grain rice
1 tablespoons ghee
water
1/4 to 1/3 cup sugar adjust to preference
2" cinnamon stick
1/2 teaspoon of saffron threads
4 cloves
3 whole cardamom
Pinch of salt
I made this sweet saffron rice in the Breville Risotto Plus. Soak the rice for about 1/2 hour before cooking.
Sauté the rice, with the saffron, raisins, cloves, cardamom and cinnamon until the rice becomes opaque.
Add the sugar, salt and water to the rice and cook covered for about 15 minutes until the rice is cooked well. The amount of water should be 1" above the rice. If you want you can add nuts slightly roasted with ghee to garnish.
