Afternoon Tea Delight with Denby

I made these delicious Indian Tea Cookies following the recipe from the Indian Vegetarian Feast book by Anjum Anand. This book has lots of simple and healthy vegetarian dishes that we can easily make for our family and friends. I like that all the dishes and sweets have an array of flavour in them. The beautiful pictures on this book will entice the readers to make the dishes, and try them. Th book is separated by breakfast and brunch, drinks, appetizers and snacks, salads, broils and grills, vegetables, cheese, beans, and eggs, grains, and desserts.
For these Indian Tea Cookies, I spiced it with only powdered dry ginger.

1/2 cup unsalted butter softened plus more for the pan
1/2 cup sugar
3 eggs
1 cup flour
3/4 tsp baking powder
pinch of salt
1/2 tsp ground cardamom or ginger
2 tbsp milk

Butter a 7 inch square pan and line with baking paper. Preheat the oven to 350F. Beat the sugar and butter until it is soft and creamy. Beat in the eggs one at a time. Sift the flour with the baking powder and add to the mixture with the salt and spice if using. Mix well and stir in the milk, pour the batter into the pan, place on the middle rack of the oven and cook for 30 to 35 minutes until a skewer inserted in the middle comes out clean and the cake is springy to touch.
Once the cake cools enough to handle, halve the cake, cut across into 3/4 inch thick slices and place the cut side down on a baking sheet. Reduce the oven temperature to 300F and bake for about 70 to 80 minutes* until the cookies are brown  in the edge and are golden in colour.  For a softer cookie bake for about 30 minutes.
The beautiful kitchen collection you see in this post such as the cute looking love heart spring form cake tin, Monsoon Jerez saucer, storage jar, and the Cook and Dine Royal Blue 4 piece dinner set is from Denby collections. There are lots of beautiful dinnerware, cookware, glassware, bakeware, and accessories on their site. Denby products are made in England, by skilled craftsmen for over 200 years. I am sure if you are a kitchen enthusiast like me you will be admiring their collection for hours, and will have so many of their products you will want to own.
