This Lentil Tomato Soup is from David Rocco's cookbook Made in Italy. I like that we can use this book as a guide and adjust the ingredients to suit our own preferences. There are delicious and easy to make recipes with beautiful pictures presented in this book that I plan to try soon. To make this soup you will need
4 tbsp olive oil
2 cloves garlic chopped
1 bunch fresh flat leaf parsley chopped
2 fresh chili peppers chopped
1 can 28 oz peeled plum tomatoes
1 can 19 oz lentils drained and rinsed (I boiled some lentils and used it)
salt and pepper to taste
water to preference
In a saucepan, heat the olive oil and add the garlic, parsley, chili peppers and sauté for a few minutes until the garlic turns golden. Pour the tomatoes with the juice. With the back of a wooden spoon break up the tomatoes into little chunks to your desired consistency. Add the rinsed lentils, salt and pepper. Let the soup simmer for 15 to 20 minutes until the soup thickens. If you want it to be more soup like consistency add more water.
