I have never thought of cottage cheese as a usual choice for a sweet treat or a punch of protein until now - when I got a chance to try the Gay Lea Nordica Smooth Cottage Cheese. 8 tsp flour
4 tsp sugar
1/8 tsp baking powder
2 tsp salted butter (or unsalted butter with a tiny pinch of salt)
1 egg
2 tsp Gay Lea Nordica Smooth Vanilla Bean Cottage Cheese
4 raspberries cut into quarters
Mix all the ingredients except the raspberries into a smooth mixture using a whisk. Pour the batter into lined miniature muffin tins. Place a quarter raspberry on the top and bake in a 325 preheated oven for about 8 to 10 minutes until a skewer inserted in the middle comes out clean.

ReplyDeleteThank you. Yes it is a little different usually cottage cheese is more crumbly and has a different texture. This cottage cheese I used is smooth similar to cream cheese.
