Mini Raspberry Muffins with Nordica Smooth Cottage Cheese

I have never thought of cottage cheese as a usual choice for a sweet treat or a punch of protein until now - when I got a chance to try the Gay Lea Nordica Smooth Cottage Cheese. The two delicious flavours Vanilla Bean and Salted Caramel Nordica Smooth Cottage Cheese is perfect to enjoy as either snack or dessert. My family and I try to find healthy snack options, and we are glad that this gluten free, protein packed Gay Lea Nordica Smooth Cottage Cheese has become one. We can enjoy it on its own, with fruits, in our favourite smoothie, or in recipes like this one that I tried inspired by the Gay lea site. The following recipe will make 12 mini raspberry muffins. 
8 tsp flour
4 tsp sugar
1/8 tsp baking powder
2 tsp salted butter (or unsalted butter with a tiny pinch of salt)
1 egg
2 tsp Gay Lea Nordica Smooth Vanilla Bean Cottage Cheese
4 raspberries cut into quarters
Mix all the ingredients except the raspberries into a smooth mixture using a whisk. Pour the batter into lined miniature muffin tins. Place a quarter raspberry on the top and bake in a 325 preheated oven for about 8 to 10 minutes until a skewer inserted in the middle comes out clean.

  3. I always thought cottage cheese is paneer. Is this something different? The muffin sounds quite nice.

    1. Thank you. Yes it is a little different usually cottage cheese is more crumbly and has a different texture. This cottage cheese I used is smooth similar to cream cheese.
