I made this birthday cake for my son's 7th birthday. I have made this chocolate cake before and like it because it is moist and an easy one bowl method cake.
1 1/3 cups all-purpose flour
1 2/3 cups sugar
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
2/3 cup vegetable oil
2/3 cup sour cream or vanilla flavour cottage cheese
1 cup water
1 tablespoon distilled white vinegar
1 teaspoon vanilla
1 extra large egg
In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt until well combined.
Add the oil and sour cream or cottage cheese and whisk until blended. Add the water in 1/2 cup at a time and whisk until combined.
Whisk in vinegar and vanilla to blend. Add the eggs and whisk until combined.
Divide the batter into two bowls, one small for the head and another big for the body. Bake in 350F preheated oven until a skewer inserted into the center of the cake comes out clean.
Let the pans cool on wire racks for about 20 minutes, then invert the cakes onto the racks to finish cooling completely before frosting.
1. I made the cake early and left it in the fridge on a plate wrapped with cling wrap.
2. I cut the shapes I want with fondant.
3. Crumb coat the cake with buttercream icing and leave it to set in the fridge.
4. Ice the cake with buttercream icing before decorating it with fondant.
5. For the eyes I used one side of an Oreo cookie and for the smaller one I cut the other side of the Oreo cookie using a cookie cutter.
6. I used fondant to add details and made designs using a knife. For the background I added crumbled chocolate chip cookies and decorated with red gel.
