Planters Peanuts recently launched their first ever peanut butter in Canada. I used this peanut butter to make these delicious cookies. These melt in your mouth type of cookies has a delicious kick of the peanut flavour and taste because the Planters Peanut Butter has a thicker, smooth taste of peanuts in it.
To make these cookies you will need...
1 3/4 cups flour
1 tsp baking powder
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
6 tbsp unsalted butter
1/2 cup brown sugar
3/4 cup icing sugar
1/2 cup peanut butter
1/2 cup oil
1 1/2 tsp vanilla
1 egg
Sift flour, baking powder, baking soda and salt. Beat butter, sugar, icing sugar until light and fluffy. Add peanut butter then add oil, vanilla and egg. Add the flour mixture.
Flour the palms of your hands and roll the dough into balls 1/2" in diameter and place them about 1" apart on a parchment sheet.
Bake at 350F for 12 minters rotating the baking sheet once while baking (I rotated it at 6 minutes). Cookies should be slightly golden brown on the edges. While the cookies cool it will harden, so don't over bake it. Leave the cookies on the baking sheet over a rack for it to cool before removing the cookies out of the baking sheet and letting it cool completely.
This batch makes over 50 cookies that are sure to melt in the mouths of your loved ones. These cookies stay well if you keep it in an airtight container at room temperature for one week.

ReplyDeleteI made these yesterday and halved the recipe as I didn't want to be tempted to eat too many. I have to say these are delicious, and different from my usual recipe in texture. I think it is the icing sugar that makes them a little finer, and melt-in-your-mouthish. I added a few Reese's Pieces to them as well. Thank you for this recipe!
