Korean Potato Salad
Korean Food Made Simple by Judy Joo is a wonderful book, as it gave me the opportunity to make food from Korean cuisine at home. There are 130 recipes in this book, and I like that we can prepare some of these in less than 30 minutes.

I like that most of the recipes use ingredients that I can easily find. I like that the book has pictures of the cooked meals, which inspires me to try. We enjoyed a few of the recipes from this book, and one of our favourite is this sweet and flavourful Korean potato salad. I changed the recipe slightly from its original version. 

1 pound Yukon gold potatoes peeled and cut into 1" pieces
salt
1 large carrot julienned
1/4 cup corn kernels frozen or grilled
2 eggs hard boiled, peeled and diced
1 crisp apple cored and diced
1/2 cup mayonnaise 
2 tsp finely chopped fresh chives 
4 1/2 tsp rice vinegar
1 tsp sugar
freshly ground black pepper

In a pan add cold water and salt the water. Put the potatoes in the pan and let it cook until the potatoes are tender. Using a slotted spoon transfer the potatoes to a colander to drain and smash with a fork and let it cool. Add the carrot, corn, apple, and eggs to the potato.

In another bowl, stir the mayonnaise, chives, vinegar, and sugar then add it to the potato mixture. Season with salt and pepper and toss to coat. Garnish with chives and refrigerate until cold before serving.

When I prep food, I find this OXO Good Grips Box Grater to be useful. It has four different surfaces: coarse, medium, fine grating, and slicing. I like that it has an attachable container with measuring marks in cups and ml for catching the ingredients we grate. I like that the container comes with a lid so it can be used to store the ingredient we grate. Since the container fits into the bottom of the grater when it is turned upside down, we can easily store it together.

Having the option of either grating it into this container or over a plate or cutting board is useful for us. The soft non slip grip makes it easy to hold the grater in place firmly over our surface when we are grating. The stainless steel blades are sharp, so when you are using it pay attention! I like that we can safely clean the grater by placing it on the top rack of our dishwasher.

  21. Sounds like a great book with some yummy recipes, and I love that you mentioned many can be prepared in 30 minutes or less, and with ingredients often already on hand at home - that's the kind of cookbook for me!

  29. I made this salad yesterday for a barbecue. I made a bigger amount planning to take some to work today for lunch.
    It was gone in a second - everyone was delighted - this is definitely a new favorite for the summer! So refreshing and tasty!
