Pineapple Salsa and Giveaway

I enjoy making a variety of sweet desserts and savoury dishes using pineapple all year around. Since I can't find fresh pineapple when it is not in season, we opt for Dole canned pineapple and find that they work just like fresh pineapples for the recipes I make. I always have a can of pineapple at home, you never know when you need one. As a pineapple fan, I am excited to be partnering with Dole Canada to host a Dole Pineapple kit giveaway to celebrate International Pineapple Day this June 27th.

I find having a can of pineapple at home or taking it with us when we go camping is more convenient than taking the fruit. I like that Dole has a variety of different pineapple cans we can choose from depending on what we plan to make. For example, I choose the pineapple slices for pineapple upside down cake, crushed pineapple when I want to make pineapple cheesecake, pineapple chunks when I plan to cook a sweet and spicy pineapple side dish, and pineapple tidbits for puddings, and pineapple juice to add to different mocktails and punches.

This easy to make pineapple salsa is delicious to enjoy with tortilla chips or with barbecues. 

1 can of chopped pineapple
1 tomato chopped
1/4 cup cilantro chopped
1/4 cup red onion finely chopped
1 jalapeño or green chille seeded and chopped optional
1 tbsp lemon juice
salt to taste  
pepper to taste

Combine all the ingredients and leave it for about 1/2 hour before serving with tortilla chips.

    I love pineapple -- if I had my way I'd eat it straight outta the can (easy cleanup) but in summer all the pineapple goes into tropical desserts and pina coladas #yum

    Ontario here and we enjoy pineapple fresh cut the most. Out of the can is good as well. Once in a while we will buy the big can and enjoy a straight up glass and sometimes a vodka in it as well.

    I live in BC and I enjoy eating freshly cut pineapple, as well as pineapple on pizza, in smoothies, in tropical drinks (a few of my favourite alcoholic drinks have pineapple in them!), on BBQ skewers, and in fruit salad. I love pineapple!!
