Honey and Spice Apple Cake

honey and spice apple cake
I got this recipe for Honey-Glazed Apple Cake from OntarioFarmFresh pamphlet during our visit to an apple orchard. This spiced apple cake tastes delicious, and can be served warm or at room temperature for breakfast, dessert, and snack. We enjoyed the cake without the glaze.

1/4 tsp ground cloves
1/4 tsp nutmeg

Line 8-inch square baking pan with parchment paper, allowing 2-inch (5 cm) overhang on 2 sides of pan.

In a bowl, whisk together, flour, ground almonds, baking powder, baking soda, cardamom, cinnamon, cloves, nutmeg, and salt and leave it a side.

Using an electric mixer, beat egg with brown sugar, until thick and creamy. In a small bowl, combine milk, oil, and honey and add it into the egg mixture and beat until smooth. Stir in the flour mixture until blended. Fold the apples into the mixture and spread in the prepared pan.

Bake in 350°F (180°C) oven for 35 to 40 minutes or until cake tester comes out clean.

I didn't add glaze to the cake, but if you want to add glaze...
In a small pan bring 1/2 cup honey, 2 tbsp apple juice or water and 1/3 tsp ground cardamom to boil, reduce heat and simmer stirring occasionally about five minutes until the syrup is slightly thickened.

Place cake on wire rack and gently poke several holes in cake with a fork and pour the warm glaze over it. We can add 1/4 cup toasted sliced almonds over the cake.

Let cool for 10 minutes, then remove cake using parchment paper. Cut into squares and serve warm or at room temperature.
