Fried Doughnuts

These yeast raised, fried doughnuts are easy to make. It would make a delicious evening snack.

3/4 cup milk warmed to 110F
8g yeast
1 egg
2 tbsp oil
2 3/4 cups flour divided
1 tbsp sugar
1/8 tsp salt
canola oil to fry

In a mixer bowl, sprinkle yeast over milk and stir with a fork. Let stand for approximately 5 minutes until it is foamy.

Attach the bowl with the yeast mixture to the mixer fitted with the paddle attachment and add egg, oil, 1 cup of the flour, sugar and salt. Leave the mixture in the bowl for 10 minute. On low speed, add just enough of the remaining flour until the dough starts to pull away from the sides of the bowl. You might not be using the entire amount of flour mentioned on this recipe. Increase the speed to medium and beat it for 1 minute.

Transfer dough to a large oiled bowl and cover with plastic wrap. Let it rise in a warm draft-free place until doubled in volume, for about 30 minutes.

Turn dough out onto a floured work surface. Roll out to slightly thicker than 1/4 inch. If dough is tacky, dust with additional flour. I used circle cutters to make shapes of doughnuts, re-roll scraps of dough as necessary. Place the cut doughnut shapes at least 1 inch apart on prepared baking sheet. Cover with a clean kitchen towel and let it rise for 20 minutes.

Meanwhile, in a large deep pot or deep fryer, heat about 4 inches of oil over medium heat until temperature rises to 360F. Deep fry 4 doughnuts at a time in hot oil, turning once until golden brown, each side will take about 15 seconds. Using a slotted spatula, transfer to a paper towel to absorb excess oil. The oil heat should be adjusted and maintained between the batches. I tossed the warm doughnuts with icing sugar. If you want to put icing, let the doughnuts cool completely before icing.
