This creamy chocolate mousse is delicious and easy to prepare. It can be served cold topped with fresh berries.
120g dark chocolate or milk chocolate at room temperature

3 tbsp unsalted butter
3 tbsp sugar
1/4 tsp lime juice
3 egg whites
3 egg yolks
5 tbsp whipping cream
Prepare a double broiler to melt the chocolate and butter. To speed the process keep stirring until the chocolate melts. Remove the melted chocolate from the double broiler, and add the egg yolks one at a time to the cool chocolate mixture and beat it.
Whip the whipping cream lightly, as the texture needs to have a running consistency. Incorporate the whipping cream to the chocolate mixture until it is just combined.

Whip the egg whites with the lime juice until it forms peaks. Add the whipped egg whites slowly to the chocolate mixture by folding it in.
The mousse needs to be left covered with a cling film and kept in the fridge for four hours until it is set. The mousse will have a spongy texture. The cold mousse can be served to individual cups using a spoon or piped into containers for individual servings.
Whip the whipping cream until it forms peaks, and pipe it over the mousse, add garnish if you wish, top it with berries and serve it.
