This delicious coconut cake is easy to whip up perfect for tea time! We like how moist and delicious it is. This recipe is from here.
1 1/4 cup flour
1 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1/4 cup oil
2 tbsp melted unsalted butter
3/4 cup sugar
2 eggs
1 tsp vanilla
1/2 cup milk
1/2 cup shredded sweetened coconut
Icing
1/4 cup to 1/2 cup icing sugar
1 tbsp milk or as needed
1/4 cup toasted shredded coconut
Whisk the flour, baking powder, baking soda and salt.
In another bowl, add eggs and vanilla and beat until frothy about 3 minutes. Add the sugar to the eggs and beat until combined for another 2 minutes. Add the oil, butter, and milk to the egg mixture and beat for a minute. Add the dry ingredients and mix gently. Fold in the coconut to the batter.
Pour the batter into 4 greased mini loaf pans (4"x2" pans). Bake in a preheated 350F oven for 25 minutes or until a skewer inserted in the middle comes out clean.
For the icing, add the milk as needed to make the icing for your preferred consistency. Pour the icing over the cooled coconut cake and sprinkle with the toasted coconut.
