I have seen many variations of baking pan cookies that starts off on the stove but is baked. However, this recipe from Nadiya's Netflix show is completely done on the Stovetop. We have made this recipe a few times and love it. These cookies also known as skillet cookies or Pizookie are prepared and cooked on the stove in low heat for 20 minutes.
150g unsalted butter
160g brown sugar
1 egg
225g plain flour
1/2 tsp baking soda
1/2 tsp salt
chocolate chip or sugar coated chocolate
ice cream to serve
I used a medium size, 9.5 inch non-stick thick bottom frying pan.
Place the frying pan on a low to medium heat. Add the butter and sugar and stir until it has dissolved. Take the pan off the heat and let it cool for a few minutes.
In a small bowl lightly beat the egg using a fork.
Mix the flour, baking soda and salt to the mixture in the frying pan followed by the lightly whisked egg. Using a spatula stir until you have a smooth cookie dough.
Press the cookie dough down and sprinkle the chocolate chips. Cook it on very low heat for 15 to 20 minutes. Don't be tempted to increase the heat, if in case you feel the bottom is crisping fast, put a lid on the pan for 5 minutes.
Once it is cooked let the cookie set for about 15 minutes before cutting, it will harden a little. Serve the cookie slices warm or hot with ice cream.
You can store it in an air tight container and warm the cookie slightly about 15 seconds in the microwave before serving it with ice cream.
