This flavourful citrus cake would be perfect to serve at tea time. You can also switch the oranges to other citrus flavours you like.
1 1/2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup plain thick yogurt
1 cup sugar
3 eggs
1 grated orange zest from one orange
1/2 cup vegetable oil
to pour over warm cake
1/3 cup (80 ml) freshly squeezed orange juice
1 tbsp sugar
Sift together the flour, baking powder, and salt. In another bowl, whisk together the yogurt, sugar, eggs, and orange zest. Slowly whisk the dry ingredients into the wet ingredients. With a rubber spatula, fold the vegetable oil into the batter, making sure it gets incorporated.
Grease a loaf pan about 8 1/2 by 4 1/4. Line the bottom with parchment paper. Grease and flour the pan. Pour the batter into the prepared loaf pan and bake in a preheated 350F for about 50 minutes, or until a skewer placed in the center comes out clean.
If you bake it in a 8x8 pan the bake time is a little less about 40 minutes until the skewer inserted in the middle of the cake comes out clean.
While the cake is baking, cook the orange juice with the 1 tbsp sugar until the sugar dissolves. Leave it aside. When the cake is done, allow it to cool in the pan for 10 minutes. Remove the cake and place it over a baking rack with a sheet pan underneath it. Pour the cooked orange juice sugar mixture over the warm cake. Let the cake cool before serving.
