In celebration of World Egg Month this October, I made this delicious, easy, healthy vegetable scrambled eggs.
1 tbsp oil
2 tbsp red onion
2 tbsp tomato
1/4 cup green pepper
1/4 cup mushroom
3 eggs
1/4 tsp salt
1/4 tsp pepper optional
