Okra in Coconut and Cashew Gravy
This delicious okra cooked in this coconut and cashew gravy goes well with rice and flatbread.

This okra dish is made with coconut and is a flavourful dish to serve with rice. 


2 cups okra cut into 1" pieces
2 tbsp fresh coconut grated
1 tbsp onion chopped
1 tsp curry leaves
1/4 tsp ginger garlic paste
pinch mustard seeds
1/2 tsp chillie powder
1/4 tsp garam masala
1/4 tsp turmeric
1/4 tsp salt
2 tbsp oil

Heat the oil and add mustard seeds. Then add the onions and curry leaves and sauté. Add ginger garlic paste then add the okra pieces with spices. Cover the pan so the okra is cooked. When the okra is cooked add the grated coconut. Serve this okra dish with rice.

Okra curry

Cut the okra tops off and save it on a paper towel. This tops can be used to make prints when dipped in paint to make beautiful paintings. If you want to do this activity with your children see our okra print painting.
1 cup okra cut into strips
1 tbsp oil
2 tbsp onion
1/4 tsp ginger garlic paste or 1/2 tsp garlic chopped
1/2 cup tomatoes
1 tbsp curry leaves optional
1/2 tsp chillie powder
1/4 tsp turmeric powder
1/4 tsp garam masala
1/4 tsp salt

Wash and dry okra before cutting it diagonally or into strips.
Heat oil and sauté onions. Add salt, ginger garlic paste, tomatoes, all the spices. Then add the okra. Cook in low heat covered till the okra is cooked, When pressed with a spoon it will be soft.

For this recipe you can reduce the amount of tomatoes and add about 1 tsp of tomato paste, ketchup or chillie sauce. Serve the okra curry warm with rice or flatbread.

Ridge gourd (chinese okra) curry

This dish is made with ridge gourd. It is also known as Chinese okra.

2 cups Chinese okra or ridge gourd cut into slices
1 tbsp oil
1/4 tsp mustard seeds
2 tbsp onion
2 tbsp tomato
1/2 tsp Maldive fish optional
1/2 tsp ginger garlic paste
1 tbsp curry leaves
1/2 tsp chillie powder
1/4 tsp turmeric
1/4 tsp garam masala
1/2 tsp salt
1 tbsp coconut milk powder

Heat oil and add mustard seeds. Then add onions, curry leaves, ginger garlic paste, tomatoes and sauté. Add the okra, spices and cook uncovered in low heat till the spices blend and ridge gourd is soft. Don't cover this dish when cooking as ridge gourd has a lot of water content.

Add the Maldive fish. Mix the coconut milk powder mixed with tbsp of water and then add it to the ridge gourd curry and cook for about two to three minutes. Serve hot with rice and other curries.
