3/4 to 1 lb squid cut into 2 to 3 inches
3/4 cup flour
1/2 cup cornstarch
1/2 tsp baking powder
3/4 tsp salt
1 tsp cumin seeds
1 tsp chillie flakes or to taste
1/8 cup chopped parsley
1/8 cup chopped curry leaves optional
1 cup Ginger Ale
oil to deep fry
lemon wedges to serve optional
Make a smooth batter by combining all the ingredients except the oil and lemon. Working in batches dip the squid in the batter, shake off the excess and fry.
You can also add the squid pieces to the batter, use a spoon and scoop a tablespoon full and fry.
When frying take caution, as it will splatter. I use splatter proof cover over the frying pan to eliminate this. Deep fry in a 350F hot oil until the batter is puffed and golden.
